Walnut Cake with Dates and Honey

A delicate Turkish cake with a banana base, crispy walnuts and sweet dates. Generously drizzled with honey — a real treat to have with tea.
Ingredients
- 225 g Self-raising flour
- 0.5 tsp Ground cinnamon
- 175 g Butter
- 100 g Caster sugar
- 3 tbsp Clear honey
- 2 pcs Egg
- 2 pcs Banana
- 100 g Pitted dates
- 50 g Walnuts
Instructions
- Preheat the oven to 160°C (gas mark 3). Line a 900g loaf tin with parchment paper, first greasing the base and long sides with butter. Grease the parchment paper as well.
- In a large bowl, mix together the flour, cinnamon, butter, sugar, 2 tablespoons of honey and the eggs. Peel and mash the banana. Chop the dates (kitchen scissors work best) and add to the bowl along with the banana. Mix vigorously with a wooden spoon or electric mixer for 2–3 minutes until smooth.
- Pour the batter into the prepared tin and level the surface. Generously sprinkle with walnut pieces. Place in the oven for 1 hour. Check for doneness by gently pressing the top — if the cake springs back, it's ready. If needed, bake for a further 10 minutes.
- Allow the cake to cool in the tin for 15 minutes, then turn it out onto a wire rack using the edges of the parchment paper and cool completely. Once cooled, generously drizzle with the remaining honey and slice into thick pieces.
