Norwegian Kransekake

The famous Norwegian festive tower cake made of almond rings with royal icing. A classic for weddings and New Year celebrations.

  1. Finely grind the almonds in a food processor or blender until they resemble breadcrumbs.
  2. Mix the almonds and powdered sugar in a large bowl. Add 3 egg whites and knead the dough by hand until it forms a ball. Wrap in plastic film and refrigerate for at least one hour (preferably overnight).
  3. Thoroughly grease the kransekake molds and dust with semolina, flour, or breadcrumbs.
  4. Preheat the oven to 210°C (conventional heat). Divide the dough into 6 portions.
  5. Gradually add the remaining egg white while kneading until the dough becomes elastic enough to roll into finger-thick cords. Fill the molds with the dough cords, pinching the ends into rings.
  6. Place the molds on a baking sheet and bake in the center of the oven for 10–12 minutes until the tops are golden brown. Stack the rings into a tower and decorate with royal icing made from powdered sugar and lemon juice.
