Beef Rolls in Soy Glaze with Wasabi Purée and Roasted Carrots

Succulent beef rolls with a glossy soy glaze, served with a delicate potato purée with a spicy hint of wasabi and caramelized carrots. An American dish that will delight lovers of Asian flavors.
Ingredients
- 5 pcs Potatoes
- 336 g Carrots
- 1 pcs Green onions
- 2 clove Garlic
- 1 pcs Bread
- 1 tsp Garlic powder
- 2 tbsp Soy sauce
- 500 g Ground beef
- 1 tsp Vegetable oil
- 2 tsp Sugar
- 2 tbsp Butter
- 4 tbsp Ketchup
- 0.25 tsp Wasabi
- to taste Salt
- to taste Black pepper
Instructions
- Preheat the oven to 220°C. Wash and dry all vegetables. Cut the potatoes into cubes approximately 1 cm in size. Peel the carrots and slice them diagonally into pieces about 1 cm thick. Trim the green onions and slice them thinly, separating the white parts from the green leaves; finely chop the white parts. Peel the garlic and mince it finely.
- Place a piece of bread in a medium bowl and pour 2 tablespoons of water over it, mash with your hands until it reaches a paste-like consistency. Add the ground beef, white parts of the green onions, half of the garlic, salt (approximately 3/4 teaspoon), and ground pepper. Shape the mixture into two rolls about 2.5 cm tall and arrange on a baking sheet. On the other side of the sheet, place the carrots, drizzle with oil, season with salt and pepper. Transfer to the oven for 20 minutes.
- While the rolls are cooking, place the potatoes in a pot and cover with salted water so that it covers the potatoes by 5 cm. Bring to a boil and cook until tender, approximately 12–15 minutes. Drain 120 ml of the cooking water, then drain the rest.
- While the potatoes are cooking, in a small bowl mix together the soy sauce, garlic powder, ketchup (4 tablespoons), and sugar (2 teaspoons) — this will be the glaze.
- After 20 minutes, remove the baking sheet from the oven. Generously coat the rolls with half of the glaze and set the remaining glaze aside for serving. Return the baking sheet to the oven for 4–5 minutes until the rolls are lightly caramelized and the carrots are tender.
- While the rolls are finishing, melt the butter in the same pot over medium heat. Add the remaining garlic and wait 30 seconds for the aroma to develop. Add the cooked potatoes and wasabi, mash until you reach a delicate purée, adding the reserved cooking water as needed. Season with salt and pepper to taste.
- Arrange the beef rolls, potato purée, and roasted carrots on plates. Sprinkle with the green leaves of the green onions and serve with the remaining glaze on a separate small dish for dipping.
