Turkey Meatloaf

A tender and juicy meatloaf made from ground turkey with an aromatic vegetable filling, baked in the oven with homemade barbecue sauce and white beans. A simple yet impressive dish for a family dinner.
Ingredients
- 1 tbsp Olive oil
- 1 pcs Onion
- 1 clove Garlic
- 2 tbsp Worcestershire sauce
- 3 tsp Tomato paste
- 500 g Ground turkey
- 1 pcs Egg
- 85 g Breadcrumbs
- 4 tbsp Barbecue sauce
- 800 g Canned white beans
- 2 tbsp Parsley
Instructions
- Preheat the oven to 180°C. Heat olive oil in a large skillet and sauté the chopped onion for 8–10 minutes until it becomes soft and translucent. Add the minced garlic, Worcestershire sauce, and 2 teaspoons of tomato paste. Mix well and set aside to cool.
- Place the ground turkey, egg, breadcrumbs, and the cooled onion and garlic mixture in a large bowl. Season with salt and pepper to taste and mix thoroughly. Form the mixture into a rectangular loaf and place it in a large baking dish. Brush the loaf with 2 tablespoons of barbecue sauce and place in the oven for 30 minutes.
- Meanwhile, drain the liquid from one can of beans, then transfer both cans to a large bowl. Add the remaining barbecue sauce and the rest of the tomato paste. Season with salt and pepper to taste and mix well.
- Remove the loaf from the oven, arrange the beans with sauce around it, and return to the oven for another 15 minutes until the loaf is cooked through and the beans are heated through. Sprinkle the dish with fresh parsley and serve the loaf sliced into portions alongside the beans.
