Passion Fruit Mousse

A delicate and airy mousse with an exotic passion fruit flavor — a Venezuelan delicacy that will grace any festive table. A sweet, refreshing treat with a light texture, perfectly suited for a summer menu.

  1. Sprinkle the gelatin over one-quarter cup of room temperature water in a small bowl and let it soften for approximately 5 minutes. In a medium saucepan over medium heat, combine the passion fruit puree, sugar, and softened gelatin. Stir gently until the gelatin is completely dissolved and the mixture is smooth. Be careful not to let it boil. Remove from heat and allow to cool completely. Add the sweetened condensed milk and stir well.
  2. In a clean bowl, use an electric mixer to beat the egg whites until stiff peaks form — the whites should be firm, not collapse, and remain stationary when the bowl is tilted.
  3. Fold one-third of the beaten egg whites into the cooled passion fruit mixture. Then carefully fold in the remaining whites, using a spatula until fully combined. Divide the mousse among clear glass serving dishes, cover, and refrigerate for at least 2 hours.
  4. Serve the mousse well chilled. If desired, garnish with a sprig of fresh mint.
