Pumpkin Muraba

An aromatic Eastern preserve made from pumpkin with orange and cardamom — delicate, amber-colored, with a bright citrus flavor. Perfect served with tea and baked goods.

  1. Peel the pumpkin skin, remove the inner seeds. Cut the flesh into 2 cm cubes.
  2. Remove the zest from the oranges in a thin layer (without the white pith) and cut it into thin strips, like matchsticks. Squeeze the juice from the oranges. Extract the seeds from the cardamom pods and set aside.
  3. Place the pumpkin, orange juice, zest, sugar, and cardamom seeds in a large pot and mix well. Let it marinate for 10 hours or overnight, stirring occasionally.
  4. Bring the mixture to a boil over medium heat, then reduce the temperature and simmer over low heat, stirring occasionally, until the liquid thickens and becomes syrupy. This will take about an hour or slightly longer.
  5. Cool the preserve and transfer to clean, dry jars.
