Molokhia

A traditional Egyptian dish made with tender molokhia greens and tender meat, flavored with garlic and olive oil. Rich, hearty, and extraordinarily delicious.
Ingredients
- 800 g Molokhia (frozen)
- 300 g Beef
- 1 pcs Onion
- 1 clove Garlic
- 0.5 cup Olive oil
- 1 l Water
- 1 tsp Salt
- 1 cup Lemon juice
Instructions
- Chop the onion and sauté it in 3–4 tablespoons of olive oil over medium heat until soft and lightly golden.
- Add the beef cubes and sear for 3–4 minutes on each side until a crust forms.
- Pour in 1 liter of water so that it completely covers the meat. If using a regular pot, simmer over medium heat until the meat is cooked through (30–40 minutes). To speed up the process, you can use a pressure cooker — cook under pressure for 5 minutes.
- Add the frozen molokhia, stirring thoroughly until completely thawed and brought to a boil.
- In a separate skillet, heat the remaining olive oil (1/4–1/2 cup) over medium heat. Add a garlic clove and cook until fragrant. It is important not to overheat the garlic so it does not become bitter.
- Pour the garlic oil into the pot with the molokhia, reduce the heat, and simmer for 5–10 minutes.
- Season the dish with salt to taste and serve hot with a generous splash of fresh lemon juice. It pairs wonderfully with fluffy rice or pita bread.
