Migas

A Spanish peasant appetizer made from bread fried in olive oil with garlic and bacon. A simple, hearty dish with a crispy exterior and tender interior.
Ingredients
- 1 pcs Bread
- 100 ml Olive oil
- 3 clove Garlic
- 200 g Pork or bacon
- 1 pinch Black pepper
Instructions
- Cut the bread into cubes and place in a bowl. Sprinkle with cold water, cover with a damp towel, and let sit for 30 minutes to soften the bread slightly.
- Heat the olive oil in a deep skillet over medium heat. Add garlic cloves unpeeled, making a small slit in each with a knife. Fry for 5 minutes until the garlic becomes fragrant, then remove and set aside.
- In the same hot oil, add the prepared bread. Stirring constantly, simmer for 15 minutes. Add a pinch of black pepper.
- Return the garlic to the skillet and continue stirring for about 20 minutes more. The dish is ready when the bread is soft inside and golden brown outside.
