Migas

A Spanish peasant appetizer made from bread fried in olive oil with garlic and bacon. A simple, hearty dish with a crispy exterior and tender interior.

  1. Cut the bread into cubes and place in a bowl. Sprinkle with cold water, cover with a damp towel, and let sit for 30 minutes to soften the bread slightly.
  2. Heat the olive oil in a deep skillet over medium heat. Add garlic cloves unpeeled, making a small slit in each with a knife. Fry for 5 minutes until the garlic becomes fragrant, then remove and set aside.
  3. In the same hot oil, add the prepared bread. Stirring constantly, simmer for 15 minutes. Add a pinch of black pepper.
  4. Return the garlic to the skillet and continue stirring for about 20 minutes more. The dish is ready when the bread is soft inside and golden brown outside.
