Mi Goreng Mamak

A Malaysian classic—spicy fried noodles with seafood, crispy tofu, and vegetables in an aromatic peanut and tamarind paste. This dish is prepared à la minute in the wok right before your eyes.

  1. Heat oil in a pan over medium heat. Add peanuts, dried chili peppers, and dried shrimp. Fry the aromatic ingredients until fragrant, about 2–3 minutes. Transfer to a plate and let cool.
  2. Pour the fried ingredients into a blender, add tamarind paste and water. Blend until smooth. Strain through a sieve for a silky texture.
  3. Heat oil in a pan over low heat. Add the paste mixture and cook for 8–10 minutes, stirring regularly. The oil should separate from the paste and darken in color. Set aside.
  4. Peel the potatoes, cut into small pieces, and boil in salted water until tender, about 12–15 minutes. Drain and set aside.
  5. While the potatoes cook, slice the red onion into half rings, mince the garlic, cut the cabbage and choy sum into thin strips, and dice the tofu. Boil the noodles until tender according to package instructions, then drain. Mix dark soy sauce with a small amount of water.
  6. For one serving, heat oil in a wok over medium heat. Add 1/4 of the prepared garlic, onion, and paste. Stir-fry for 1–2 minutes until fragrant. If desired, add shrimp and fry for another minute.
  7. Add 1/4 of the tofu, boiled potatoes, cabbage, and choy sum, and stir-fry for another 30 seconds, constantly stirring.
  8. Add 1/4 of the cooked noodles and pour in 3 tablespoons of the soy sauce mixture. Toss thoroughly for 1 minute, ensuring the noodles are evenly coated with sauce.
  9. Push the noodles to the side of the wok. Crack an egg into the empty space and fry for 20–30 seconds, then mix with the noodles. Transfer to a plate.
  10. Garnish with lime wedges and strips of fresh chili pepper. Repeat the process for the remaining three servings, starting from step 6.
