Mbuzzi Choma - Grilled Goat Meat

An authentic Kenyan dish - succulent goat meat cooked over charcoal with a crispy crust and smoky flavor. Served with cornmeal ugali and fresh vegetable relish kachumbari.

  1. Place the goat meat on a grill rack over charcoal or on a grill. Cook over medium heat, turning regularly and seasoning with salt as it cooks.
  2. Bring salted water to a boil in a heavy-bottomed pot. Slowly sprinkle the cornmeal, letting it fall through your fingers to prevent lumps from forming.
  3. Reduce heat to medium and continue stirring, breaking up any lumps with a spoon, until the ugali thickens and begins to pull away from the sides of the pot.
  4. Remove the ugali from heat and let it cool.
  5. Transfer the ugali to a large bowl, wet your hands with water, and shape the porridge into a firm ball for serving.
  6. For kachumbari, dice the tomatoes, onion, and green chili pepper, mix in a bowl with cilantro leaves, and season with salt to taste.
  7. Serve the hot goat meat with ugali and kachumbari. Enjoy your meal!
