Pickled Red Onion

Crispy and aromatic brine with hints of apple cider vinegar and sweetness — the perfect accompaniment to meat dishes and a wonderful garnish for salads. Scandinavian simplicity and flavor in one jar.
Ingredients
- 3 pcs Red onion
- 2 tsp Sea salt
- 200 ml Apple cider vinegar
- 50 g Sugar
- 1 tsp Black pepper
- 4 pcs Bay leaf
Instructions
- Peel the onion bulbs, halve them from top to bottom, and slice into thin half-rings. Place in a colander set over a bowl and sprinkle with salt. Gently toss the onion with your hands to ensure the salt covers all the pieces evenly. Let stand for one hour — during this time the onion will release its juices and begin to marinate.
- While the onion is salting, pour the vinegar into a saucepan, add 50 ml of water and sugar. Bring to a gentle boil, stirring constantly until the sugar dissolves. Simmer for 2–3 minutes and remove from heat.
- Transfer the marinated onion into sterilized jars, sprinkling each layer with black pepper. Pour the warm brine over the onion and place 2 bay leaves in each jar. Seal with lids.
- Cool to room temperature and store in the refrigerator. The pickled onion will be ready after one day and will keep for up to 4 weeks.
