Mandazi — Kenyan Doughnuts

Crispy on the outside and soft on the inside, these doughnuts are a staple of Kenyan cuisine. The perfect breakfast or snack that is easy to make at home and loved by the whole family.
Ingredients
- 750 g Self-rising flour
- 6 tbsp Sugar
- 2 pcs Eggs
- 1 cup Milk
- 1 tsp Cinnamon
- 500 ml Oil for deep frying
Instructions
- In a large bowl, combine the self-rising flour, sugar, and cinnamon (if using). For variety, you can add shredded coconut, ground cloves, or your favorite spices.
- In a separate bowl, beat the eggs and mix them with the milk.
- Make a well in the center of the flour mixture, pour in the egg and milk mixture, and gradually stir together to form a dough.
- Knead the dough for 3–4 minutes until it no longer sticks to the sides of the bowl and becomes smooth.
- Cover the dough with a damp cloth and let it rest for 15 minutes.
- On a lightly floured surface, roll out the dough to a thickness of approximately 1 cm. Do not roll it too thin — this way the doughnuts will be fluffier and more attractive.
- Using a sharp knife, cut the dough into pieces of your desired size. Set them aside in preparation for frying.
- Heat the oil in a deep skillet or pot. Carefully lower the mandazi pieces into the hot oil and fry until light brown on one side, then flip and fry on the other side.
- Transfer the cooked mandazi to paper towels to remove excess oil. Serve warm or cold.
