Mamoul — Cookies for Eid Celebration

Crispy and fragrant Arab cookies with date filling — a traditional treat for holidays. Each cookie is beautifully decorated with an elegant pattern thanks to a special mold.

  1. Mix softened butter with powdered sugar and beat until creamy.
  2. Add sunflower oil, flour, and semolina. Mix until smooth.
  3. Pour in warm milk and gently mix without over-kneading the dough. Cover the dough and let it rest for an hour (or less).
  4. While the dough is resting, prepare the date filling. Toast the sesame seeds in a dry skillet, then add butter. Mix the date paste with sesame seeds and butter, add a little water to get a soft but not liquid consistency. Transfer to a plate and let cool.
  5. Form the cooled date filling into balls weighing about 15 g each. Refrigerate for 30 minutes.
  6. Remove the dough and form it into balls weighing about 30 g each.
  7. Take a dough ball, flatten it slightly, and place a date ball inside. Close the edges and shape the mamoul using a special mold.
  8. Place the cookies in a preheated 180 °C oven for 20 minutes until golden brown on the bottom and lightly golden on top.
