Chow Fun Noodles with Shrimp

The aroma of Asian cuisine on a plate: crispy noodles, tender shrimp, and fresh vegetables in a savory oyster sauce. A classic Chinese dish prepared in minutes!
Ingredients
- 0.5 pcs Rice noodles
- 224 g Shrimp
- 0.5 pcs Egg
- 1 pinch White pepper
- 3 tsp Sesame oil
- 3 tbsp Cornstarch
- 5 tbsp Vegetable oil
- 1 tsp Fresh garlic
- 1 tsp Ginger
- 0.5 cup Onion
- 1 cup Bean sprouts
- 0.5 cup Green onions
- 1 tbsp Rice wine
- 1 tbsp Oyster sauce
- 0.5 tbsp Sugar
- 0.5 tbsp Rice vinegar
- 1 tbsp Soy sauce
- 2 tbsp Water
Instructions
- Soak the rice noodles in cold water overnight until they become soft.
- Boil the noodles in boiling water for 10–15 minutes, then drain in a colander and rinse with cold water to stop the cooking.
- In a bowl, mix the shrimp, egg, white pepper, 1 teaspoon of sesame oil, 1 tablespoon of cornstarch, and 1 tablespoon of vegetable oil. Mix well and let sit for 10 minutes.
- Heat 2 tablespoons of oil in a wok over high heat. Add the marinated shrimp and stir-fry for 3–4 minutes until golden. Transfer the shrimp to a plate.
- Add the remaining oil to the wok, add garlic, ginger, and chopped vegetables (onion, bean sprouts, green onions). Stir-fry for 2–3 minutes until tender.
- Add the cooked noodles to the wok, along with rice wine, oyster sauce, sugar, rice vinegar, remaining sesame oil, white pepper, and soy sauce. Mix well.
- Return the shrimp to the wok and stir to combine. In a separate bowl, dissolve the remaining cornstarch in water, slowly add this mixture to the dish while stirring until the sauce thickens to the desired consistency.
