Chow Fun Noodles with Shrimp

  1. Soak the rice noodles in cold water overnight until they become soft.
  2. Boil the noodles in boiling water for 10–15 minutes, then drain in a colander and rinse with cold water to stop the cooking.
  3. In a bowl, mix the shrimp, egg, white pepper, 1 teaspoon of sesame oil, 1 tablespoon of cornstarch, and 1 tablespoon of vegetable oil. Mix well and let sit for 10 minutes.
  4. Heat 2 tablespoons of oil in a wok over high heat. Add the marinated shrimp and stir-fry for 3–4 minutes until golden. Transfer the shrimp to a plate.
  5. Add the remaining oil to the wok, add garlic, ginger, and chopped vegetables (onion, bean sprouts, green onions). Stir-fry for 2–3 minutes until tender.
  6. Add the cooked noodles to the wok, along with rice wine, oyster sauce, sugar, rice vinegar, remaining sesame oil, white pepper, and soy sauce. Mix well.
  7. Return the shrimp to the wok and stir to combine. In a separate bowl, dissolve the remaining cornstarch in water, slowly add this mixture to the dish while stirring until the sauce thickens to the desired consistency.
