Chicken Wings with Cumin, Lemon, and Garlic

  1. Using a sharp kitchen knife, cut each wing at the joint into two pieces. Finely chop the garlic. Squeeze the lemon juice and zest the rind. In a bowl, combine the garlic, lemon juice, zest, cumin seeds, and olive oil. Season generously with salt and pepper. Place the chicken wings in a dish and toss well, ensuring each wing is thoroughly coated with the marinade. Cover with a lid or plastic wrap and refrigerate for at least 1 hour, preferably overnight.
  2. Preheat the oven to 200°C. Arrange the marinated wings on a baking sheet in a single layer and transfer to the oven.
  3. Bake the wings for 35–40 minutes until they turn golden and crispy. In the last 10 minutes, generously drizzle with honey to allow them to caramelize.
  4. Transfer the cooked wings to a serving platter. Serve with a stack of napkins. Offer small bowls of olives, pistachios or almonds, dates, pickled hot peppers, and flatbread on the side.
