Chicken Curry with Peanuts

An aromatic Indian curry featuring tender chicken breast, enriched with creamy peanut butter and yogurt. This dish will captivate you with its deep spices and subtle nutty flavor.
Ingredients
- 1 pcs Red hot chili pepper
- 50 g Ginger
- 1 pcs Garlic
- 1 bunch Cilantro
- 1 tbsp Sunflower oil
- 4 pcs Chicken breast
- 5 tbsp Peanut butter
- 150 ml Chicken broth
- 200 g Greek yogurt
Instructions
- Finely slice a quarter of the red chili pepper and set aside. Place the remaining pepper along with ginger, garlic, cilantro stems, and one-third of its leaves into a blender. Blend into a coarse paste, adding a little water if necessary.
- Heat the oil in a deep skillet over medium heat. Add the chicken breast pieces and sear for 1 minute until golden brown.
- Add the prepared paste and stir for another 1 minute to release the spice aromas.
- Stir in the peanut butter, chicken broth, and yogurt. Bring to a gentle simmer and cook for 10 minutes until the chicken is heated through and the sauce has thickened. Stir occasionally.
- Add most of the remaining cilantro leaves and stir. When serving, sprinkle with the remaining herbs and sliced pepper. Serve with rice or sweet potato puree.
