Apple and Blackberry Crumble

A British warm dessert: caramelized apples with blackberries topped with crispy sandy crumble. Perfect served with vanilla ice cream.
Ingredients
- 120 g Wheat flour
- 60 g Sugar
- 60 g Butter
- 300 g Braeburn apples
- 30 g Butter
- 30 g Demerara sugar
- 120 g Blackberries
- 0.25 tsp Ground cinnamon
- to taste Vanilla ice cream
Instructions
- Preheat the oven to 190°C. Mix the flour and sugar in a bowl, add the butter and rub together with your fingertips into breadcrumbs (do not overwork). Spread on a baking tray and bake for 15 minutes until lightly golden.
- For the compote, peel the apples and cut into 2 cm cubes. Melt the butter with the sugar in a sauté pan over medium heat, cook for 3 minutes until light caramel. Add the apples (3 minutes), then the blackberries and cinnamon (another 3 minutes). Remove from heat, cover and let stand for 2–3 minutes.
- Transfer the warm fruit to a baking dish, sprinkle with the crumble mixture and warm in the oven for 5–10 minutes. Serve with vanilla ice cream.
