Katsudon — Japanese Pork in Egg

Crispy breaded pork in a sweet soy sauce with egg and rice — a classic Japanese dish that comes together quickly and satisfies even the most demanding appetite.
Ingredients
- 1 tbsp Vegetable oil
- 1 pcs Onion
- 1 pcs Pork cutlet (tonkatsu)
- 150 ml Vegetable broth
- 1 tbsp Soy sauce
- 1 tsp Mirin
- 1 tsp Sugar
- 2 pcs Egg
- 200 g Sushi rice
- 1 bunch Green onion
Instructions
- Heat the oil in a skillet over medium heat. Slice the onion into half-rings and sauté until golden brown, about 3–4 minutes.
- Place the cutlet in the center of the skillet. Mix the broth, soy sauce, mirin, and sugar together, then pour three-quarters of this mixture around the cutlet. Cook for 2–3 minutes until the sauce thickens slightly and the cutlet is heated through.
- Lightly beat the eggs and carefully pour them around the cutlet. Continue cooking for 2–3 minutes until the whites are set while the yolk remains slightly runny.
- Divide the hot rice between two bowls. Divide the cutlet with egg and onion evenly between the bowls and place on top of the rice. Sprinkle with green onion, add a splash of soy sauce if desired for extra depth of flavor, and serve immediately.
