Canadian-Style Breakfast Potatoes

Crispy fried potatoes with bacon, garlic, and maple syrup — a hearty and incredibly aromatic breakfast that will bring the whole family to the table.
Ingredients
- 3 pcs Potatoes
- 1 tbsp Olive oil
- 2 pcs Bacon
- 1 clove Garlic
- 1 tbsp Maple syrup
- to taste Parsley
- pinch Salt
- pinch Black pepper
- to taste Allspice
Instructions
- Place the bacon strips in the freezer ahead of time — partially frozen bacon is much easier to cut into small pieces.
- Wash the potatoes and cut them into medium cubes of roughly equal size. To prevent the pieces from darkening, immediately place them in a bowl of cold water.
- Heat 1–2 tablespoons of olive oil in a large skillet over medium-high heat, tilting it so the oil coats the bottom evenly.
- Drain and pat dry the potatoes, then place them on the heated skillet. Season with salt, black pepper, and allspice to taste. Fry for about 10 minutes, stirring frequently, until golden brown. Add a bit more oil if needed.
- Remove the bacon from the freezer, cut it into small pieces, and add to the potatoes. The bacon will render its fat, allowing the potatoes to continue browning. Stir occasionally. Fry for 5–6 minutes until the bacon is crispy.
- Reduce the heat to medium-low. Add the finely minced garlic, stir well, and season again if needed. Sprinkle in the parsley. Cook for about a minute until the garlic becomes fragrant.
- Just before serving, drizzle the potatoes with maple syrup and stir gently. Let it rest for another minute — the syrup will caramelize the potatoes and add a subtle sweetness. Serve hot on a warm plate, with fried eggs.
