Pommes Boulangère

A classic French dish in which thinly sliced potatoes are braised in the oven together with onions and fragrant thyme, soaked in vegetable broth. On top is a golden crispy crust, inside is a tender, melting texture.
Ingredients
- 2 pcs Onion
- pcs Thyme
- 2 tbsp Olive oil
- 1.5 kg Potatoes
- 425 ml Vegetable broth
Instructions
- Preheat the oven to 200 °C (180 °C with convection). In a skillet with olive oil, sauté the onion with sprigs of thyme over medium heat for about 5 minutes — it should become soft and lightly golden.
- Oil a baking dish with a capacity of about 1.5 liters. Arrange a layer of potatoes on the bottom, then distribute some onion with thyme. Alternate the layers, finishing with potatoes. Pour vegetable broth over everything and place in the oven for 50–60 minutes — the potatoes should be completely cooked through, and the top layer should become golden and crispy.
