Caribbean Tamarind Balls

A traditional Jamaican delicacy with a rich sweet and sour flavor — a crispy sugar shell and chewy center make these candies a true discovery for the whole family.
Ingredients
- 448 g Tamarind pulp
- 1.5 cup Sugar
Instructions
- Place the tamarind pulp in a bowl, add 1 cup of sugar, and mash everything thoroughly with a fork or spoon until you have a uniform mixture. Pinch off small pieces and roll them between your palms to form marble-sized balls or slightly larger, depending on your preference.
- Pour the remaining sugar onto a flat plate or baking sheet. Roll each ball in the sugar on all sides — it should be completely coated with a sweet crust.
- The balls can be eaten immediately, but if you let them sit for a few hours or leave them overnight, the sugar will crystallize and the texture will become denser and more interesting. Enjoy!
