Carbonade (Norwegian Beef Patties) with Caramelized Onions

Juicy beef patties with spices and a tender texture — a traditional Norwegian dish. Served with golden caramelized onions and can be enjoyed as a festive dinner or a delicious bread sandwich.

  1. Grate one onion and set aside. Slice the second onion into thin rings and sauté in 1 tablespoon of butter over medium heat, stirring, until the onion turns golden and caramelizes.
  2. In a bowl, combine the ground beef, grated onion, salt, black pepper, nutmeg, cornstarch, and water. Mix thoroughly with your hands until you have a uniform mixture.
  3. Shape the mixture into a log, then cut into 6 patties. Using a knife, make light crosshatch marks on each patty — shallow cuts perpendicular to each other, without cutting all the way through.
  4. Heat 2 tablespoons of butter in a skillet over high heat. Fry the carbonades on both sides until they develop a beautiful golden crust, then reduce the heat to low and cook for another 2–3 minutes until fully cooked through.
  5. Serve the carbonades with caramelized onions. For dinner, accompany with boiled potatoes, stewed peas, and brown sauce; for lunch or a snack, place on a slice of bread.
