Cambodian Waffles (Nom Poum)

Crispy waffles made from rice flour with coconut milk — a street delicacy of Cambodia with the caramel aroma of palm sugar. Golden, lacy, and incredibly fragrant — they disappear from the table in minutes.
Ingredients
- 0.5 cup Rice flour
- 0.5 cup Wheat flour
- 0.5 cup Coconut milk
- 0.75 cup Palm sugar
- 2 pcs Eggs
- 0.5 tsp Salt
- 1 tbsp Vegetable oil
Instructions
- Combine rice flour and wheat flour in a bowl, add coconut milk, palm sugar, eggs, and salt. Mix well until you have a smooth batter without lumps — it should be slightly thicker than pancake batter.
- Heat the waffle iron over heat or on a stovetop, brush its surfaces with vegetable oil using a pastry brush. Pour in the batter, close the lid, and cook until golden-brown in color and you hear a characteristic crackle — approximately 5–7 minutes.
