Beef Caldereta

A rich Filipino beef stew in tomato sauce with peanut butter, vegetables, and a subtle heat—real comfort food that you simply cannot resist.
Ingredients
- 2 kg Beef
- 1 pcs Beef broth cube
- 1 tbsp Soy sauce
- 2 cup Water
- 1 pcs Green bell pepper
- 1 pcs Red bell pepper
- 1 pcs Potatoes
- 1 pcs Carrots
- 224 g Tomato paste
- 3 tbsp Peanut butter
- 5 pcs Chili pepper
- 1 pcs Onion
- 5 clove Garlic
- 3 tbsp Olive oil
Instructions
- Heat olive oil in a pot or pressure cooker over medium heat. Add diced onion and minced garlic, sauté, stirring, until the onion becomes soft and translucent.
- Add beef cut into large chunks. Sauté over medium-high heat until the meat is browned on all sides with a light golden crust.
- Pour in soy sauce, add tomato paste and water. Stir and bring to a boil. Drop in the beef broth cube, cover the pressure cooker with a lid, and cook for 30 minutes.
- While the meat is cooking, cut carrots and potatoes into large chunks and sauté them in a separate skillet with a small amount of oil until golden. Set aside.
- Open the pressure cooker, add chili pepper and peanut butter. Stir well until the peanut butter is completely dissolved in the sauce.
- Add the diced bell peppers, sautéed potatoes, and carrots. Cover with the lid and continue cooking for another 5–7 minutes until the vegetables are tender.
- Taste and season with salt and ground black pepper to your liking. Serve hot—with rice or fresh bread.
