Beef Caldereta

A rich Filipino beef stew in tomato sauce with peanut butter, vegetables, and a subtle heat—real comfort food that you simply cannot resist.

  1. Heat olive oil in a pot or pressure cooker over medium heat. Add diced onion and minced garlic, sauté, stirring, until the onion becomes soft and translucent.
  2. Add beef cut into large chunks. Sauté over medium-high heat until the meat is browned on all sides with a light golden crust.
  3. Pour in soy sauce, add tomato paste and water. Stir and bring to a boil. Drop in the beef broth cube, cover the pressure cooker with a lid, and cook for 30 minutes.
  4. While the meat is cooking, cut carrots and potatoes into large chunks and sauté them in a separate skillet with a small amount of oil until golden. Set aside.
  5. Open the pressure cooker, add chili pepper and peanut butter. Stir well until the peanut butter is completely dissolved in the sauce.
  6. Add the diced bell peppers, sautéed potatoes, and carrots. Cover with the lid and continue cooking for another 5–7 minutes until the vegetables are tender.
  7. Taste and season with salt and ground black pepper to your liking. Serve hot—with rice or fresh bread.
