Kabsa

A fragrant Saudi Arabian dish of chicken and rice with vegetables and spices. The chicken is braised in broth, then mixed with rice, sautéed vegetables, and raisins to create a hearty and aromatic delicacy.
Ingredients
- 400 g Chicken
- 1 cup Rice
- 1 pcs Green bell pepper
- 1 pcs Red bell pepper
- 2 pcs Mushrooms
- 1 pcs Sweet corn
- 2 pcs Carrot
- 50 g Raisins
- 1 tsp Turmeric
- 1 tsp Kabsa spice mix
- pinch Salt
- pinch Black pepper
Instructions
- Sauté the chicken pieces in olive oil until golden brown. Add a bouillon cube and simmer over medium heat for about 30 minutes until the chicken becomes tender and juicy.
- At the same time, in another pot, sauté the diced vegetables (bell peppers, mushrooms, carrot, corn) in olive oil, stirring frequently, until they become soft and lightly golden.
- Add rice, raisins, turmeric, and kabsa spice mix to the cooked vegetables. Pour in 625 ml of water, stir well, and bring to a boil.
- Once the rice has absorbed the water and becomes tender, transfer all the contents to a baking dish and mix with the cooked chicken. Place in the oven for 10–15 minutes at 180°C to create a crispy top.
