Kabsa

A fragrant Saudi Arabian dish of chicken and rice with vegetables and spices. The chicken is braised in broth, then mixed with rice, sautéed vegetables, and raisins to create a hearty and aromatic delicacy.

  1. Sauté the chicken pieces in olive oil until golden brown. Add a bouillon cube and simmer over medium heat for about 30 minutes until the chicken becomes tender and juicy.
  2. At the same time, in another pot, sauté the diced vegetables (bell peppers, mushrooms, carrot, corn) in olive oil, stirring frequently, until they become soft and lightly golden.
  3. Add rice, raisins, turmeric, and kabsa spice mix to the cooked vegetables. Pour in 625 ml of water, stir well, and bring to a boil.
  4. Once the rice has absorbed the water and becomes tender, transfer all the contents to a baking dish and mix with the cooked chicken. Place in the oven for 10–15 minutes at 180°C to create a crispy top.
