Spanish Chicken Pie

A hearty and aromatic dish from Spanish cuisine featuring a tender potato crust and a savory sauce made with tomatoes, chicken, and peppers. Perfect for a family dinner.
Ingredients
- 1 kg Potatoes
- 3 tsp Paprika
- 2 tsp Olive oil
- 2 pcs Onion
- 2 clove Garlic
- 800 g Canned tomatoes in their own juice
- 300 g Chicken
- 140 g Roasted peppers
- Green olives
Instructions
- Preheat the oven to 200°C (180°C convection). Boil the potatoes in salted water for 15–20 minutes until tender. Drain the water, return the potatoes to the pot, and mash into a puree, adding 2 teaspoons of paprika and salt and pepper to taste.
- Heat the olive oil in a skillet and sauté the sliced onion and garlic for 3–4 minutes until soft. Add the remaining paprika, stir, and cook for another minute. Pour in the canned tomatoes and bring the sauce to a gentle simmer. Transfer the sauce to a large ovenproof dish, add the diced chicken, roasted peppers, and olives. Adjust salt and pepper to taste.
- Spread the mashed potatoes evenly over the sauce. Place the dish in the preheated oven for 15 minutes until the potatoes are lightly golden on top and the sauce begins to bubble around the edges.
