Spanish Fig Balls with Almonds

Delicate homemade candies made from figs, almonds and dried fruits with a subtle aroma of cognac and cloves. Perfect as a gift or tea-time dessert that keeps well and becomes even more delicious with each passing day.

  1. Process the almonds in a food processor until they resemble breadcrumbs, then transfer to a large bowl. Chop the figs and process them thoroughly in the food processor until you achieve a smooth, sticky paste.
  2. Add the fig paste to the almonds. Mix well by hand, incorporating the dried apricots, cranberries, cognac, honey and ground cloves into the mixture. Knead until everything combines into a uniform mass.
  3. Divide the mixture into 18 equal portions and roll each one into a ball. Spread the sesame seeds on a tray and roll each ball in the seeds on all sides until completely coated.
  4. Cover the tray with a clean kitchen towel and leave the balls to dry at room temperature for one week, then package them. Store in a cool place for up to 2 months.
