Spanish Beans with Chicken and Chorizo

A hearty and aromatic Spanish dish with tender chicken, spicy chorizo, and soft beans. Cooked in one pot and will fill your home with wonderful aromas.
Ingredients
- 300 g Pinto beans
- 1 pcs Onion
- 1 tbsp Ground paprika
- 3 pcs Fresh thyme
- 2 pcs Bay leaf
- 1 bunch Fresh parsley
- 4 pcs Chicken thighs
- 250 g Baby potatoes
- 250 g Chorizo
- 100 g Fresh spinach
Instructions
- Soak the beans for 4 hours or overnight in a large bowl with plenty of water. The next day, drain the water, rinse, and let drain.
- In a large heavy-bottomed pot, combine the rinsed beans, onion, paprika, sprigs of thyme, bay leaf, and chicken thighs. Cover with water or broth so that everything is submerged. Bring to a boil, then reduce heat, cover with a lid, and simmer for 45 minutes.
- Remove the chicken to a separate plate. Add diced potatoes and diced chorizo to the pot. Continue cooking for another 30 minutes until the beans and potatoes are tender.
- Once cooled, remove the skin and bones from the chicken and break into large pieces. Return the meat to the pot, add fresh spinach, and cook for another 5 minutes until the spinach is tender. Serve hot.
