Croatian Bean Soup with Sausage

A hearty and aromatic soup with white beans, tomatoes, and spicy Croatian sausage. The perfect dish for cold days — delicious and warming, and even better the next day.
Ingredients
- 2 pcs Canned white beans (cannellini)
- 3 tbsp Vegetable oil
- 2 cup Tomatoes (fresh or canned)
- 5 pcs Shallot
- 2 clove Garlic
- 1 pinch Parsley
- 500 g Croatian sausage (chorizo)
Instructions
- Heat the oil in a pot over medium heat. Finely chop the shallot and garlic, add to the oil, and sauté, stirring occasionally, until the vegetables become soft and fragrant (about 5 minutes).
- Add the chopped tomatoes, beans with all the liquid from the cans, and the sliced sausage. Stir, bring to a boil.
- Option 1: Cover with a lid and simmer over low heat for 20 minutes. Option 2: Transfer to a baking dish and bake in a preheated oven at 180°C for about 30 minutes, until the soup becomes thick and aromatic.
- Season with salt, pepper, and parsley to taste. Serve hot. Tip: this dish tastes even better if you reheat it the next day.
