Breadfruit in Butter Sauce

An exotic dish from Caribbean cuisine: succulent slices of breadfruit braised in a fragrant butter and tomato sauce with garlic and lime. Try something truly unusual!

  1. Cut the breadfruit in half, remove the seeds from the core, and peel away the skin. Cut into large chunks and boil in salted water with half an onion and olive oil over high heat until tender—approximately 20 minutes. Drain the cooked pieces in a colander and allow to cool.
  2. While the breadfruit is cooking, melt the butter in a skillet over medium heat and sauté the onion rings until lightly golden. Add the garlic, canned tomatoes, parsley, lime juice, salt, and pepper. Stir and cook for another couple of minutes.
  3. Pour in the water, bring the sauce to a boil, then reduce the heat and simmer for 5–10 minutes until the sauce thickens slightly. Add hot pepper sauce to taste if desired.
  4. Slice the cooled breadfruit and arrange on a serving platter. Generously pour the butter and tomato sauce over the top, garnish with fresh chopped parsley, and serve immediately.
