  1. Melt the butter in a large skillet (preferably cast iron) over medium heat. Add the chopped onion and cook for a few minutes until it becomes translucent.
  2. Add the diced potatoes and chopped corned beef. Spread the mixture evenly across the skillet. Increase the heat to medium-high and press the mixture down with a metal spatula so it makes firm contact with the skillet.
  3. Do not stir the contents of the skillet — let it brown. A good sign is the characteristic sizzling sound. Peek under the mixture with a metal spatula to check for doneness. When the bottom is well browned, use the spatula to flip the hash pieces and fry them on the other side. Press everything down again with the spatula. If the mixture sticks too much, add a bit more butter. Continue cooking until the potatoes and corned beef develop a beautiful golden crust on all sides.
  4. Remove from heat and sprinkle with fresh parsley. Generously add freshly ground black pepper and salt to taste. Serve hot.
