Beef and Broccoli Stir-Fry

A Chinese wok classic: thin slices of beef with broccoli in a rich oyster sauce. Ready in 10 minutes.

  1. Marinate the beef: mix soy sauce, sherry, ½ tsp cornstarch, and a pinch of pepper. Add the beef sliced into thin strips and let sit for 10 minutes.
  2. Prepare the sauce: mix oyster sauce, sherry, soy sauce, and chicken broth. Set aside.
  3. Bring water to a boil, blanch broccoli for approximately 2 minutes until al dente, and drain well.
  4. Heat a wok over high heat, add oil. Lay the beef in a single layer and sear without stirring for 1 minute. Flip, add garlic, and cook for another 30–60 seconds until the pink color disappears.
  5. Pour in the sauce and cornstarch slurry (1 tsp cornstarch mixed with 1 tbsp water). Stir until the sauce comes to a boil and thickens (approximately 30 seconds). Fold in the broccoli and serve immediately with rice.
