Mustard Champ

A traditional Irish mashed potato dish with mustard and scallions — tender, buttery, and fragrant. The perfect accompaniment to ham or fish pie.
Ingredients
- 1 kg Potatoes
- 200 ml Milk
- 50 g Butter
- 2 tbsp Wholegrain mustard
- 1 bunch Scallions
Instructions
- Cut the potatoes and boil them in salted water for 15–18 minutes until tender. Drain and mash the potatoes until smooth.
- Warm the milk with butter at the edge of the pot. Add the mustard and whisk this mixture into the mashed potatoes until smooth.
- Lightly sauté the sliced scallions in the remaining butter for 1–2 minutes, keeping them bright green and crisp. Gently fold into the mash and serve.
