Dutch Spiced Breakfast Cake (Ontbijtkoek)

A delicate Dutch spiced cake infused with warm spices—the perfect companion to your morning coffee. A pearl sugar topping gives it a crispy crust and festive appearance.
Ingredients
- 250 g Self-raising flour
- 250 g Soft brown sugar
- 250 ml Milk
- 4 tbsp Pearl sugar
- 1 tbsp Ground ginger
- 0.5 tsp Cardamom
- 1 tsp Baking powder
- 1 pinch Salt
Instructions
- Preheat the oven to 160°C. Line a cake tin with parchment paper and set aside.
- In a large bowl, mix all the dry ingredients together: flour, brown sugar, ground ginger, cardamom, baking powder, and salt.
- Pour the milk into a small saucepan and heat it over low heat until almost boiling, but do not let it boil completely. Slowly pour the hot milk into the dry ingredient mixture, stirring constantly. Do not overmix! Once you have a smooth, homogeneous batter, transfer it to the prepared tin.
- Sprinkle the pearl sugar on top and place in the preheated oven for approximately 1 hour.
- Check the cake after 50 minutes. If a wooden skewer inserted into the center comes out clean, the cake is ready. If not, leave it in the oven for a few more minutes.
