Shrimp Saganaki

A Greek dish of king prawns in a delicate tomato sauce with white wine and melted feta cheese. Aromatic, hearty, and incredibly delicious — perfect served with crusty bread.
Ingredients
- 500 g King prawns (raw)
- 3 tbsp Olive oil
- 1 pcs Onion
- 1 pinch Fresh parsley
- 250 ml White wine
- 1 pcs Canned tomatoes
- 0.5 tsp Garlic
- 200 g Feta cheese
Instructions
- Place the prawns in a pot and cover with water. Bring to a boil and cook for 5 minutes. Drain the water into a separate bowl (you will need it), and set the prawns aside to cool.
- Heat 2 tablespoons of olive oil in a saucepan, add the diced onion and cook, stirring, until softened (approximately 3–4 minutes). Add the parsley, white wine, canned tomatoes, garlic, and the remaining olive oil.
- Reduce the heat and simmer the sauce, stirring occasionally, for about 30 minutes until it thickens and develops a rich flavor.
- While the sauce is cooking, clean the cooled prawns: use tongs to remove the legs, then carefully peel away the shell, leaving the head and tail intact.
- When the sauce has thickened, add the prawns to it. If the sauce has cooled, bring it back to a boil and cook the prawns for 5 minutes. Remove from heat, generously add cubes of feta cheese and let it melt slightly (approximately 2–3 minutes). Serve warm with slices of crusty bread.
