Gambas al Ajillo

A classic Spanish dish of king prawns sautéed in fragrant garlic-infused oil. Simple yet incredibly delicious — perfect for a festive table or a romantic dinner.

  1. Clean the prawns by removing the shells, leaving the tails intact. Using a toothpick, carefully remove the intestinal vein. Season with sea salt. If cooking in a regular skillet rather than ceramic cookware, the prawns can be left in their shells.
  2. Pour olive oil into a ceramic baking dish or skillet, add sliced garlic and cayenne pepper. Place over high heat. When the garlic begins to turn golden, add the prawns and sauté for 1–2 minutes on each side until pink.
  3. Sprinkle the dish with chopped parsley and freshly ground black pepper. Serve immediately while hot. If prepared in ceramic cookware, you can bring it straight to the table — note that the oil and dish will remain hot for several more minutes.
