Fyrstekake — Norwegian Prince's Cake

A traditional Norwegian festive cake with crispy shortbread crust and delicate almond filling. A melt-in-your-mouth dessert that will grace any celebration table.

  1. Beat softened butter with sugar and vanilla extract until light and fluffy. Add egg yolks and mix well. Add flour and baking powder, knead soft dough by hand until smooth and uniform.
  2. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  3. Grind almonds and brown sugar in a food processor to the desired consistency. Add melted butter, eggs, cognac, and almond extract, mix thoroughly.
  4. Line the bottom of the cake pan with parchment paper and grease the sides. Divide the chilled dough: roll out two-thirds and place it on the bottom of the pan, raising the edges 2–3 cm up the sides.
  5. Preheat the oven to 175°C.
  6. Distribute the almond filling evenly over the dough. Roll out the remaining dough, cut it into long strips, and arrange them over the filling to create a lattice pattern. If the strips break, simply press them back into place.
  7. Carefully brush the dough with beaten egg using a pastry brush.
  8. Bake in the preheated oven for approximately 45 minutes until golden brown. The top of the cake should be lightly browned, while the almond filling inside remains tender and soft.
