French Onion Soup

A classic French soup featuring caramelized onions, aromatic broth, and crispy croutons topped with melted Gruyère cheese. A truly comforting soup that will warm you on any occasion.
Ingredients
- 50 g Butter
- 1 tbsp Olive oil
- 1 kg Onions
- 1 tsp Sugar
- 4 clove Garlic
- 2 tbsp Wheat flour
- 250 ml Dry white wine
- 1 l Beef broth
- 4 pcs Bread
- 140 g Gruyère cheese
Instructions
- In a large heavy-bottomed pot, melt the butter together with the olive oil. Add the sliced onions, cover with a lid, and cook for 10 minutes until softened. Then sprinkle with sugar and continue cooking for another 20 minutes, stirring frequently, until the onions turn a beautiful golden color and become soft and sweet. Be careful toward the end to prevent the onions from burning.
- In the final few minutes, add the garlic, sprinkle with flour, and stir well. Increase the heat and continue stirring, gradually adding the wine and then the hot broth. Cover with a lid and simmer for 15–20 minutes.
- Preheat the grill and toast the bread slices until golden. Ladle the soup into ovenproof bowls, place one or two toasted bread slices on top, and generously sprinkle with grated cheese. Place under the grill for 2–3 minutes until the cheese melts and turns golden brown.
