French Lentils with Garlic and Thyme

Aromatic and hearty lentils prepared according to a French recipe — tender grains infused with the fragrance of thyme and bay leaf. An ideal side dish or foundation for a light meal.
Ingredients
- 45 ml Olive oil
- 1 pcs Onion
- 2 clove Garlic
- 1 pcs Carrot
- 540 g French green lentils
- 1 tsp Dried thyme
- 3 pcs Bay leaf
- 1 tbsp Salt
- 2 pcs Celery
Instructions
- Place a large pot over medium heat and pour in the olive oil. Once the oil is heated, add the diced onion, garlic, carrot, and celery. Sauté the vegetables, stirring occasionally, until softened, approximately 5–10 minutes.
- Pour in 1.5 liters of water, add the lentils, thyme, bay leaves, and salt. Bring to a boil, then reduce the heat and simmer the lentils at a moderate boil.
- Cook the lentils until completely tender and most of the liquid is absorbed, 20–25 minutes. If excess liquid remains, drain it off. Serve immediately while hot, or cool and reheat before serving.
- Tip: for a more robust flavor, replace half of the water with chicken broth in equal proportions.
