  1. Preheat the oven to 175°C.
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, sugar, and cinnamon. Set aside 2 tablespoons of the mixture, and press the remainder firmly onto the bottom and sides of a 23 cm pie dish. Bake the crust for 10 minutes until lightly golden.
  3. In a saucepan over medium heat, combine the milk, sugar, cornstarch, egg yolks, vanilla extract, and salt. Stirring constantly, cook until the mixture begins to bubble and thickens to a pudding-like consistency. Set aside to cool.
  4. In a mixer bowl, beat the egg whites with sugar and cream of tartar until stiff, glossy peaks form.
  5. Pour the cooled filling into the crust and top with a thick layer of meringue, forming attractive pointed peaks. Sprinkle with the reserved cracker crumbs.
  6. Bake the pie for about 10 minutes until the meringue is golden brown. Watch carefully during baking.
  7. Chill the pie in the refrigerator. It is best enjoyed on the day it is made, while the meringue is still crisp.
