Fiskesuppe — Creamy Norwegian Fish Soup

A delicate and aromatic soup made with fresh fish, vegetables, cream, and shrimp. A classic Norwegian dish that warms the soul and brings a sense of coziness.
Ingredients
- 454 g White fish fillet
- 1 clove Garlic
- 2 pcs Potatoes
- 2 pcs Carrots
- 1 pcs Leek
- 3 tbsp Butter
- 5 tbsp Wheat flour
- 4 cup Fish stock
- 1 cup Milk
- 1.3 cup Sour cream or crème fraîche
- 1 cup Shrimp
- 1 tbsp Fresh herbs (chives, dill, or parsley)
Instructions
- Cut the fish fillet into cubes or strips. Crush or finely mince the garlic. Rinse all vegetables thoroughly. Cut the potatoes and carrots into thin julienne, and slice the leek into thin strips as well.
- Melt the butter in a saucepan, add the garlic, and wait until it begins to turn lightly golden. Sprinkle in the flour and stir well to prevent lumps from forming.
- Slowly add the fish stock, stirring constantly to avoid lumps.
- Add the prepared vegetables, pour in the milk, and bring the soup to a boil. Simmer for about 10 minutes until the vegetables become tender.
- Stir in the sour cream or crème fraîche and return the soup to low heat. When the soup begins to simmer gently again, remove from heat. Leave the saucepan on the warm burner, add the fish pieces, and let them poach in the hot soup for about 5 minutes. If using shrimp, add them just before serving.
- Ladle the soup into bowls and generously sprinkle with fresh herbs.
