Phirni

A delicate Indian dessert made with milk and cornstarch, flavored with cardamom and rose water. Served chilled with crunchy nuts—the perfect treat to enjoy with tea.
Ingredients
- 1.5 l Milk
- 5 tbsp Cornstarch
- 300 g Sugar
- 0.5 tsp Ground cardamom
- 1 tsp Rose water
- to taste Almonds
- to taste Pistachios
Instructions
- Pour 240 ml of milk into a small bowl, add cornstarch, and whisk well until smooth and lump-free.
- Transfer the remaining milk to a non-stick saucepan, add sugar, ground cardamom, and rose water (if using). Place over medium heat and bring almost to a boil.
- Without allowing the milk to boil, slowly pour the milk and cornstarch mixture into the hot milk, stirring constantly to prevent lumps from forming. Continue stirring until the mixture thickens.
- Remove the saucepan from heat and transfer the phirni to a large, shallow bowl or serving dish. Allow to cool to room temperature.
- Transfer the phirni to the refrigerator for 1–2 hours until completely chilled.
- Before serving, sprinkle the phirni with chopped almonds and pistachios.
