Phirni

A delicate Indian dessert made with milk and cornstarch, flavored with cardamom and rose water. Served chilled with crunchy nuts—the perfect treat to enjoy with tea.

  1. Pour 240 ml of milk into a small bowl, add cornstarch, and whisk well until smooth and lump-free.
  2. Transfer the remaining milk to a non-stick saucepan, add sugar, ground cardamom, and rose water (if using). Place over medium heat and bring almost to a boil.
  3. Without allowing the milk to boil, slowly pour the milk and cornstarch mixture into the hot milk, stirring constantly to prevent lumps from forming. Continue stirring until the mixture thickens.
  4. Remove the saucepan from heat and transfer the phirni to a large, shallow bowl or serving dish. Allow to cool to room temperature.
  5. Transfer the phirni to the refrigerator for 1–2 hours until completely chilled.
  6. Before serving, sprinkle the phirni with chopped almonds and pistachios.
