Fettuccine Alfredo

A classic Italian dish with a delicate creamy sauce, Parmesan cheese, and aromatic spices. Quick and easy to prepare, perfect for a family dinner.

  1. In a medium saucepan, combine the cream, butter, and cornstarch. Place over low heat and stir until it reaches a gentle boil. Then remove from heat and keep the sauce warm.
  2. In a separate bowl, mix together the Parmesan cheese, nutmeg, and black pepper to taste. Do not add salt at this stage.
  3. In another saucepan, bring water to a boil with 2 teaspoons of salt. Add the fettuccine and cook according to the package instructions (usually 3–4 minutes). Reserve some pasta water in a separate cup, then drain the pasta without drying it completely.
  4. Add the cooked pasta to the saucepan with the cream sauce. Sprinkle with the cheese mixture and gently toss using a silicone spatula over low heat. Once the ingredients are combined, pour in 3 tablespoons of pasta water. Continue stirring until the sauce is absorbed and becomes glossy. Check the seasoning, divide among warm plates, and serve immediately, garnished with parsley or chives.
