Fettuccine Alfredo

A classic Italian dish with a delicate creamy sauce, Parmesan cheese, and aromatic spices. Quick and easy to prepare, perfect for a family dinner.
Ingredients
- 227 g Condensed cream or heavy cream
- 25 g Butter
- 1 tsp Cornstarch
- 100 g Parmesan cheese
- Nutmeg
- Black pepper
- 250 g Fettuccine
- Parsley or chives
Instructions
- In a medium saucepan, combine the cream, butter, and cornstarch. Place over low heat and stir until it reaches a gentle boil. Then remove from heat and keep the sauce warm.
- In a separate bowl, mix together the Parmesan cheese, nutmeg, and black pepper to taste. Do not add salt at this stage.
- In another saucepan, bring water to a boil with 2 teaspoons of salt. Add the fettuccine and cook according to the package instructions (usually 3–4 minutes). Reserve some pasta water in a separate cup, then drain the pasta without drying it completely.
- Add the cooked pasta to the saucepan with the cream sauce. Sprinkle with the cheese mixture and gently toss using a silicone spatula over low heat. Once the ingredients are combined, pour in 3 tablespoons of pasta water. Continue stirring until the sauce is absorbed and becomes glossy. Check the seasoning, divide among warm plates, and serve immediately, garnished with parsley or chives.
