Fasoulieh bi-z-zait (Syrian Green Beans in Olive Oil)

A simple and aromatic dish from Syrian cuisine — tender green beans braised in olive oil with garlic and cilantro. Served hot with flatbread or as a side dish.

  1. Place the green beans in a large pot and drizzle with olive oil. Season with salt to taste. Cover with a lid and place over medium-high heat. The beans will braise in their own juices — stir occasionally. Cook until the pods become tender and take on a brownish tint, as is preferred in Syria.
  2. Add minced garlic and cilantro, and continue cooking for another 2–3 minutes until the cilantro begins to wilt. Serve hot — you can scoop it up with warm flatbread or serve as a side dish alongside the main course.
