Falafel in Pita with Tahini Sauce

Crispy falafel balls in soft pita bread with fresh vegetables and fragrant sesame paste sauce — a classic Syrian sandwich that will win over anyone.
Ingredients
- 12 pcs Falafel
- 60 ml Sesame paste (tahini)
- 60 ml Water
- 30 ml Lemon juice
- 2 clove Garlic
- 1 tsp Paprika
- 6 pcs Pita bread
- 1 bunch Lettuce leaves
- 1 pcs Tomato
- 0.5 pcs Cucumber
- 1 pcs Pickled cucumbers
- 0.25 pcs Red onion
- 15 ml Harissa (hot spice)
Instructions
- Preheat the oven to 230°C. Place the falafel on a baking sheet and bake until hot, 8–10 minutes.
- While the falafel bakes, whisk together the sesame paste, water, lemon juice, crushed garlic, and paprika in a bowl. You will get a smooth and aromatic sauce.
- Cut each pita bread at the top to create a pocket. Chop the vegetables: slice tomatoes and cucumber into pieces, cut onion into thin half-rings, and slice pickled cucumbers into strips.
- Place 2 hot falafel balls into each pita, then add equal amounts of lettuce leaves, tomatoes, fresh cucumber, pickled cucumbers, and red onion. Generously drizzle each sandwich with tahini sauce and a pinch of harissa for heat. Serve immediately while the pita is still warm.
