Falafel in Pita with Tahini Sauce

  1. Preheat the oven to 230°C. Place the falafel on a baking sheet and bake until hot, 8–10 minutes.
  2. While the falafel bakes, whisk together the sesame paste, water, lemon juice, crushed garlic, and paprika in a bowl. You will get a smooth and aromatic sauce.
  3. Cut each pita bread at the top to create a pocket. Chop the vegetables: slice tomatoes and cucumber into pieces, cut onion into thin half-rings, and slice pickled cucumbers into strips.
  4. Place 2 hot falafel balls into each pita, then add equal amounts of lettuce leaves, tomatoes, fresh cucumber, pickled cucumbers, and red onion. Generously drizzle each sandwich with tahini sauce and a pinch of harissa for heat. Serve immediately while the pita is still warm.
