Farinata

An Argentine appetizer made from chickpea flour with a crispy crust and tender interior. Simple to prepare, with truly magical results!

Ingredients

Instructions

  1. Mix chickpea flour with water, add salt and pepper. Whisk until smooth. Let the batter rest for at least 4 hours (or overnight in the refrigerator) — this allows the flour to fully absorb the liquid, making the flavor more vibrant.
  2. Preheat the oven to 220°C. Pour olive oil into a round baking pan and place it in the hot oven for 2–3 minutes to heat the oil thoroughly.
  3. Carefully pour the batter into the hot pan with oil. Bake for 25–30 minutes until the top becomes golden and crispy.
  4. Remove the farinata from the oven and cut into triangles or squares. Serve hot, generously sprinkled with black pepper.
