Jiggs' Dinner

A traditional Canadian dish made with salted beef, yellow split peas, and vegetables. A hearty and aromatic home-cooked meal that has been prepared for generations in Canadian families.
Ingredients
- 908 g Salted beef
- 1 cup Yellow split peas
- 1 pcs Cabbage
- 6 pcs Carrot
- 1 pcs Turnip
- 8 pcs Potato
- 3 tbsp Butter
- to taste Black pepper
Instructions
- The evening before cooking, break the salted beef into large pieces and soak in cold water for 8–10 hours. In a separate bowl, place the yellow split peas, cover with water, and leave to soak overnight.
- Drain the water from the beef, place it in a large pot, and cover with fresh cold water (6–7 liters). Place the soaked peas in a cooking pouch or wrap in cheesecloth folded three times, and tie securely so the peas can expand freely. Tie the pouch to the pot handle so it does not stick to the bottom.
- Bring the contents of the pot to a boil, then reduce the heat and simmer gently for 2 hours.
- Remove the pea pouch, transfer its contents to a bowl, and mix well with butter and black pepper to taste. Set aside.
- Add the sliced cabbage to the pot and cook for 20 minutes.
- Add the turnip, carrot, and potato, and cook for another 20 minutes or until the vegetables are tender.
- Remove the salted beef and vegetables from the pot and arrange on a serving dish.
- The broth remaining in the pot can be served separately as a beverage, or reduced to a sauce consistency and drizzled over the dish before serving.
