Chtitha Batata — Algerian Potato Stew

An aromatic potato stew with Eastern spices — a simple yet incredibly delicious dish from Algerian cuisine. Young potatoes are braised in a fragrant spiced paste with tomato until tender.

  1. In a mortar, combine garlic, red pepper, ground cumin, paprika, black and cayenne pepper, and salt. Pound thoroughly with a pestle until a paste forms, then add olive oil and mix well.
  2. Heat a large pot over medium heat. Transfer the prepared paste to the pot and cook, stirring, until fragrant.
  3. Add the potato halves and mix with the spiced paste. Stir in the tomato paste and mix well.
  4. Pour in water until it just covers the potatoes and bring to a boil. Reduce the heat and simmer until the potatoes are tender.
  5. Transfer the potatoes to a serving bowl and drizzle with the remaining sauce.
