Chtitha Batata — Algerian Potato Stew

An aromatic potato stew with Eastern spices — a simple yet incredibly delicious dish from Algerian cuisine. Young potatoes are braised in a fragrant spiced paste with tomato until tender.
Ingredients
- 4 clove Garlic
- 1 pcs Red hot pepper
- 1 tsp Ground cumin
- 1 tsp Paprika
- 0.5 tsp Black pepper
- 0.5 tsp Cayenne pepper
- 0.5 tsp Salt
- 2 tbsp Olive oil
- 908 g New potatoes
- 1 tbsp Tomato paste
- Water
- to taste Salt
Instructions
- In a mortar, combine garlic, red pepper, ground cumin, paprika, black and cayenne pepper, and salt. Pound thoroughly with a pestle until a paste forms, then add olive oil and mix well.
- Heat a large pot over medium heat. Transfer the prepared paste to the pot and cook, stirring, until fragrant.
- Add the potato halves and mix with the spiced paste. Stir in the tomato paste and mix well.
- Pour in water until it just covers the potatoes and bring to a boil. Reduce the heat and simmer until the potatoes are tender.
- Transfer the potatoes to a serving bowl and drizzle with the remaining sauce.
