Chivito — Uruguayan Sandwich

A legendary Uruguayan sandwich featuring juicy beef, bacon, ham, and melted cheese on a fluffy sesame seed bun. Generously drizzled with chimichurri — this is the sandwich you simply must try.
Ingredients
- 80 g Milk
- 60 g Butter
- 1 tbsp Molasses
- 220 g Water
- 9 pcs Eggs
- 500 g Bread flour
- 10 g Salt
- 10 g Dry yeast
- 1 pcs Egg for glazing
- 2 tbsp Sesame seeds
- 4 pcs Onion
- 8 pcs Beef tenderloin
- 2 clove Garlic
- 8 pcs Bacon
- 8 pcs Ham
- 8 pcs Mozzarella
- 4 pcs Tomatoes
- 0.25 bunch Lettuce
- 2 tbsp Mustard
- 100 ml Chimichurri sauce
Instructions
- Warm the milk with butter and molasses until the butter is completely dissolved. Add cold water and 1 egg, and stir until combined.
- In a large bowl, combine flour, salt, and yeast. Gradually add the milk mixture and stir with a wooden spoon until smooth — the dough does not need to be kneaded vigorously. Cover with a damp towel and refrigerate overnight.
- The next morning, knead the dough on a generously floured surface. Divide into 8 equal portions, shape into balls, and place on a parchment-lined baking sheet. Cover with a damp towel and let rise for approximately one hour until the dough has doubled in size.
- Preheat the oven to 220°C. Brush the buns with egg and sprinkle with sesame seeds. Bake for 15–20 minutes until golden brown. Allow to cool.
- Slice the onion and sauté it in butter over medium heat for 10–15 minutes, stirring constantly, until it caramelizes and becomes soft and sweet.
- Rub the beef tenderloin with garlic. Grill or pan-fry the steaks, bacon, and remaining 8 eggs, season with salt and pepper. Toast the buns by splitting them in half.
- Assemble the chivito: spread mustard on the bottom half of the bun, then layer the steak, a slice of ham, a slice of mozzarella, a strip of bacon, a tomato slice, and lettuce leaves. Top with a fried egg, drizzle generously with chimichurri sauce, and sprinkle with caramelized onion. Cover with the top half of the bun and serve immediately.
