Chelsea Buns

Soft, aromatic buns with cinnamon, dried fruit and brown sugar — a classic of British baking that will fill your home with a cosy aroma and bring the whole family to the table.

  1. Sift the flour with salt into a large bowl. Make a well in the centre and add the yeast.
  2. In a small saucepan over medium heat, warm the milk together with the butter (40 g) until the butter melts and the mixture becomes warm (not hot).
  3. Pour the warm milk and butter mixture into the bowl with the flour, add the egg and mix until a soft, sticky dough forms. Add a little more flour if needed.
  4. Turn the dough out onto a well-floured surface and knead for about 5 minutes, adding flour as necessary, until the dough becomes smooth, elastic and no longer sticks to your hands.
  5. Lightly oil a clean bowl, place the dough in it and turn to coat with oil on all sides. Cover with cling film and leave in a warm place for 1 hour — the dough should double in size.
  6. Lightly oil a baking tray. Knock back the risen dough, turn out onto a lightly floured surface and roll into a rectangle about 0.5 cm thick. Brush the entire surface with melted butter (25 g), then sprinkle evenly with brown sugar, cinnamon and dried fruit.
  7. Roll the dough up tightly into a log and cut into 10 slices about 4 cm thick. Arrange them on the prepared baking tray with a little space between each one. Cover with a kitchen towel and leave to prove for another 30 minutes.
  8. Preheat the oven to 190°C. Bake the buns for 20–25 minutes until they have risen and turned golden brown.
  9. While the buns are finishing baking, prepare the glaze: combine the milk and sugar in a small saucepan, bring to the boil, then reduce the heat and simmer for 2–3 minutes.
  10. Remove the hot buns from the oven, immediately brush with glaze and allow to cool on a wire rack.
